What is Sanuki Udon?

讃岐うどんとは何ですか?

Sanuki udon is a traditional Japanese noodle dish renowned for its distinctive thick, chewy noodles made from wheat flour. Originating from Kagawa prefecture in the Shikoku region, these noodles are celebrated for their smooth, glossy texture and firm bite. Sanuki udon is versatile and can be served in varous ways. At Shōdo Udon Lab, we offer warm Udon in a savory broth (Kake Udon), with a curry soup (Curry Udon), or chilled Udon with a cold sauce (Bukkake Udon). Each bowl offers a simple yet profoundly satisfying culinary experience, showcasing the art of Japanese noodle making.

Our homemade Udon is made daily using flour imported from Japan.
Every morning, we freshly prepare our broths using traditional recipes and ingredients to ensure the highest quality.

We offer a variety of Udon dishes as well as some classic Japanese starters. Our menu includes several vegetarian and vegan options. During the week, we also offer a seasonal lunch menu.

Dashi

出汁

Dashi is a fundamental Japanese broth that forms the base of many traditional dishes, providing a delicate yet umami-rich flavor. Made from simmering ingredients like kombu (kelp), bonito flakes (dried fish), or shiitake mushrooms, dashi is celebrated for its light and savory taste that enhances the natural flavors of other ingredients. At Shōdo Udon Lab, we use dashi as the foundation for our broths, infusing our udon dishes with the deep, nuanced flavors that define authentic Japanese cuisine. Whether in a simple kake udon or a more complex curry udon, dashi is at the heart of our culinary creations, offering a taste of Japan's rich food heritage.

Kake Udon

かけうどん

A simple and classic udon dish served in a light broth made from dashi, soy sauce, and mirin. The noodles are served hot in the broth, letting the flavors shine through for a refreshing and comforting meal.

Bukkake Udon

ぶっかけうどん

Chilled udon noodles served with a flavorful sauce poured over the top, made from soy sauce and dashi. The chilled noodles have a firmer, chewier texture, making it an ideal choice for hot summer days.

Curry Udon

カレーうどん

A rich and savory dish that combines udon noodles with a thick Japanese curry broth. The curry sauce is mildly spice and hearty, making this a filling and satisfying option.

Shōdo Udon Lab

小豆製麺所

Our restaurant is named after Shōdoshima (小豆島), a scenic Japanese island located within Kagawa (the "Udon Prefecture"). Shōdoshima is known for its olive groves and soy sauce production — our restaurant offers soy sauce from Shōdo island as a complementary condiment. It also served as an inspiration for the setting of the animated film Kiki's Delivery Service.

We are located in the heart of the Simon-Dach-Kiez in Berlin Friedrichshain, offering authentic Japanese udon dishes.
